What is Soft Ice Cream?

Soft ice cream is very similar to hard ice cream, with a key difference: the mixture that makes up the ice cream product is not hard-frozen. Soft ice cream can be made using a soft ice cream machine, while hard ice cream is produced by batch freezers.

What is a Soft Ice Cream Machine?

A soft ice cream machine is a specialized device designed for making and dispensing soft ice cream. It combines the ice cream mixture with air, creating a smooth, creamy texture. Soft ice cream machines come in various types and configurations, including single-flavor machines, dual-flavor machines, and countertop models.

Single-flavor machines have a chamber for holding the ice cream mixture, while dual-flavor machines have two independent chambers, allowing you to dispense different-flavored mixtures. Countertop models are compact machines designed to be installed on counters, commonly used in small businesses or homes. Soft ice cream machines are popular in ice cream shops, bubble tea shops, restaurants, and other food service establishments.

Working Principle of Soft Ice Cream Machine

The working process of a soft ice cream machine involves placing the liquid mixture into the material container, and the mixture is then fed into the freezing cylinder through the action of gravity or a pressure pump. During this process, the mixture is evenly blended with air, and the expanded milk slurry is stirred and gradually cooled inside the freezing cylinder, increasing in viscosity. When the desired viscosity is reached, it is pushed to the outlet by a screw conveyor. By pressing the handle, the machine extrudes the finished soft ice cream product.

Advantages of Using the Machine

Soft ice cream machines offer numerous benefits to restaurants, bubble tea shops, and others looking to produce and serve delicious frozen treats. Here are the advantages of using a soft ice cream machine:

Ease of Use and Operation: Soft ice cream machines typically feature user-friendly control panels, requiring minimal training to start generating profits.

Customizable Flavors: Opting for a dual-hopper machine allows you to customize flavors to meet diverse customer preferences.

Rapid Production: Soft ice cream machines enable the quick production of large quantities of soft ice cream, ensuring a continuous supply for customers.

Consistent Results: By setting predefined programs, soft ice cream machines deliver consistent results without altering established settings, reducing customer complaints.

Variety of Options: Since soft ice cream machines support customizable flavors, they provide customers with a variety of options to choose from.

Maintenance and Cleaning of Ice Cream Machine

Proper maintenance is essential for ensuring food safety when it comes to soft ice cream machines. Correctly cleaning the machine is of utmost importance, as improper cleaning may result in unforeseen consequences. Due to the dairy nature of the products, a machine that is not cleaned properly can lead to illnesses and harbor a significant amount of harmful and dangerous bacteria. To avoid the buildup of residues, it is recommended to clean the machine regularly and use approved disinfectants.

In addition to safety concerns, infrequent cleaning of the machine may result in faster wear and tear of parts, causing older residues to accumulate more in the specialized mechanical components of the machine.

[Cleaning Steps]

At the end of each day's work, you should clean the soft ice cream machine. This is because not only the machine is not in operation at night, but also dairy products left overnight in the machine can potentially breed bacteria.

If there are any remaining products in your machine, you should stop the machine first. Once all the products inside the machine have melted, remove the solution completely.

Next, pour a cleaning solution mixed with warm water (a cleaner approved by the manufacturer) into the hopper, open the automatic cleaning function, let it circulate for at least 5 minutes, and then drain the water. Also wipe out any residue in the hopper.

After the automatic cleaning is completed, dismantle all detachable components, including the dispensing handle, water tray, etc. Soak these parts in the cleaning solution for a few minutes and then rinse them thoroughly.

After reassembling the components, lubricate each part according to the instructions in the product manual. This ensures that each part operates at maximum efficiency.

Disinfection is the final step after all cleaning procedures are completed. Mix a disinfectant solution with water, run another cleaning cycle for about 1 minute, and then drain the solution. After this, you also need to pour in clean water and run the cleaning cycle again to drain out all the disinfectant.
